INGREDIENTS: (preheat oven to 400 degrees) >3/4 cup flour >1/4 cup ground flaxseed >1/4 cup oats >2 tbsp crushed walnuts >2 tbsp crushed almonds >1/2 cup pumpkin puree >1/2 cup unsweetened almond milk >1/3 cup applesauce >1/4 cup honey
1. Whisk together dry ingredients in medium size bowl (for the crushed nuts, pour into a small baggie and use heavy object [I just used the pumpkin puree can] to pound until crushed)
2. In a smaller bowl, mix wet ingredients until smooth and creamy.
3. Add wet ingredients into the dry & mix until it becomes a nice, chunky consistency.
4. Put the mix into a muffin tin [be sure to oil or use fillers] and bake for 18-20 minutes
